Beet Up Your Frittata

  • GoodHealthy Beet Greens, about 3oz

  • Goat Cheese, any flavor

  • 1 Clove Garlic, chopped

  • 8 eggs

  • S&P

  • P.S. You can add cream to fluff eggs but we did not

  • P.S.S This recipe is for a dozen mini frittatas

  1. Heat oven to 350 and grease muffin pan

  2. Mix eggs, garlic and salt/pepper

  3. Portion eggs mixture into muffin pan (fill halfway)

  4. Crumble goat cheese into egg mixture

  5. Top eggs with chopped beet greens

  6. Bake for about 15-20 mins, crumble extra goat cheese on top when done, because why not
