Beet and Bagel Sandwich


  • 1 bagel (we suggest an everything bagel)

  • Large handful beet greens

  • 3 - 4 tablespoons veggie cream cheese

  • Thin slices of heirloom tomato

  • 1/4 fresh lemon

  1. Spread veggie cream cheese on both sides of a slice bagel (toasted or untested to your preference)

  2. Layer on thin slices of heirloom tomato on the bottom half

  3. Add a large handful of beet greens

  4. Squeeze fresh lemon on the greens

  5. Top with the top half of the bagel and enjoy!
