GoodHealthy® Kale Mac and Cheese

Thanksgiving might look different this year but your food should still taste amazing. Enjoy GoodHealthy® Kale Mac and Cheese on Thursday



GoodHealthy® Kale Mac and Cheese

1 clamshell GoodHealthy® Kale

1+1/2 boxes cavatappi or shells

1/2 stick butter

2 12oz cans evaporated milk

1/3 cup whole milk (or 2%)

2 large eggs

1 tsp salt

1/2 tsp nutmeg

1/4 tsp cayenne pepper

8oz sharp cheddar cheese grated

4oz gruyere cheese grated

4oz Swiss cheese grated

8oz American cheese(torn apart)

  1. Preheat oven to 375

  2. Cook pasta al dente

  3. Drain pasta, return to pasta pot, add butter, and mix well.

  4. Combine evaporated milk, milk, eggs (lightly beaten), salt, nutmeg, cayenne in a bowl. Whisk well. Set aside.

  5. Mix all the cheese together.

  6. Spread 1/3 pasta in the bottom of buttered 9x13 pan, top with 1/3 of cheeses. Repeat a second time. Pour milk mixture over top and bake 20 until golden and bubbling.

  7. Add kale and mix well.

  8. Enjoy!
