Kale Pesto

It’s safe to say this GoodHealthy Kale Pesto will turn anyone into a kale (and pesto) lover. Creamy, with flavors of kale, garlic, cashews and lemon, all combined to make the world’s most glorious pesto. Use it in a pasta dish, for dipping your veggies or go the easy route and eat it with a spoon.

GoodHealthy Kale Pesto

3 cups GoodHealthy Kale, torn and packed

1/2 cup raw cashews

2 cloves garlic (roast or sauté first)

1 1/4 - 1 1/2 olive oil

1-2 cups basil, packed

Juice of one lemon


  1. Add raw cashews to bowl ,covered with water and let sit for at least 4 hours.

  2. After raw cashews have absorbed the water, add kale, cashews, garlic and basil in food processor until finely chopped.

  3. While food processor is running add olive oil, lemon juice, S&P.

  4. Pulse until smooth

  5. Enjoy
